Nora's Kitchen: Sandwiches

Attending Book Passage’s virtual event last week, featuring Dr. Jane Goodall and author, Peter Wohlleben, confirmed for me the importance of a vegetarian diet.

Peter Wohlleben, author of The Heartbeat of Trees, talked about how much of the land and forest areas are used for meat production; so if we consume less meat, we can regain more forests. Dr. Jane Goodall echoed this sentiment by saying that moving towards a plant-based diet is one of the most important things we can do to help the future of the environment, including climate change. Not only does a plant based diet help the environment, but it is also better for our health too. Every so often I will post some vegetarian ideas. In my first post, I will showcase a couple of delicious sandwiches.


Humus Sandwich (Vegan)


  • whole wheat bread

  • hummus

  • carrot

  • cucumber

Take two pieces of whole wheat bread and spread hummus on each. Grate a carrot and add that to one slice of the bread. Thinly slice a cucumber and lay it on the other side of the bread. Put both slices together, cut in half and enjoy!


Beet Sandwich (Vegetarian)


  • French bread sliced

  • sliced beets

  • arugula or baby spinach

  • mascarpone or cream cheese

  • butter

Spread mascarpone or cream cheese on two slices of French bread. On one piece, layer sliced beets on top; on the other piece, layer arugula or spinach. Put both slices together to make a sandwich. Melt butter in a frying pan and grill the sandwich for a few minutes, then add more butter to the top of the sandwich and flip, grilling the other side. Remove sandwich from pan, cut in half and enjoy!
